Meatballs without breadcrumbs

Help please! What's your best homemade (quite basic ) meatball recipe? All the ones I can find say fresh breadcrumbs. We don't have any. Only those crappy ones that are shop bought. Would porridge oats work?

I just add an egg and some seasoning to the mince and shape into balls, put them in the fridge for half an hour and then cook

Mince, finely chopped onion, herbs, seasoning. Shape and cook. I never use breadcrumbs or egg in mine.

My homemade meatball recipe is

one onion, 500g mince, one egg, seasoning (salt and pepper or a beef oxo cube)- blitz onion in food processor, add mince and egg and seasoning and pulse til combined.

Form balls, brown in frying pan, do what you like with them... usually done in an Italian sauce or gravy here, or leftovers sliced in a bread roll with lashings of ketchup for lunch.

I agree with iwantacookie I think the breadcrumbs are just there to make the meat go further aren’t they?

No need for breadcrumbs just bind the mixture with egg yolks (no whites) and don't move them about too much.

I don't use meatballs or egg. Mince and whatever herbs : flavouring I have.

Do you have any bread? You can whizz it up into breadcrumbs if you have a mixer or just leave them out. I usually do one egg, a slice of bread, a bit of parmesan, 400g mince and seasoning. The bread makes the meat go further but it's not essential.

I don't use breadcrumbs. Just eggs to bind them. I also use an Icecream scoop to make the balls, then bake them for 20 minutes, cover with marinara sauce and cheese then bake for a further 15 minutes

I soak a slice of bread in water, squeeze the excess liquid then mix it in. Never used bread crumbs🤷🏻‍♀️

If you want to bulk them out with bread, another tip is to soak a slice of bread in water and then squeeze it out. This works really well.

It’s not bulking them out with bread. Breadcrumbs or a bit of soaked bread or crumbed crackers makes them lighter and helps them hold together. Same goes for burgers and sausages if you make your own.
