If you eat eggs and toast for breakfast, what do you have for lunch?

Since I've cut out a lot of sugar, I've gone off a lot of my previous breakfasts and am wanting a lot of egg and toast. Great, except I'm now stuck for ideas for lunch (we eat a lot of potatoes and pasta for our evening meal).

I don't like eating a lot of meat for lunch so would prefer vegetarian-based meals.

If you have egg on toast for breakfast, what do you typically have for lunch?

Soup

JontyDoggle37 · 03/09/2019 21:18

Wraps, salads, soups.

BarbaraofSeville · 03/09/2019 21:19

Soup would fit well in that way of eating.

Home made, lots of veg, with pulses and/or whole grains.

Or salads with protein and a pitta, I like cheese and tuna mayo with peppers, pickes etc, or falafels, hummus, salad etc.

Or there's nothing to stop you having egg and toast again if it's a favourite meal.

I have a large and varied salad with protein or soup.

Currently on very low carb/sugar for gestational diabetes so not having the toast for breakfast-just eggs! With or without bacon/sausage. Have to have a lot of meat/cheese though.

A monster salad! Keeps you full for ages, weighs about two lbs
Lettuce, spinach, red, orange, green and yellow peppers, cucumbers, spring onions, tomatoes, feta, olives, tuna, dill, basil, parsley, cilantro, chives and a little vinaigrette

AdaColeman · 03/09/2019 21:29

Fish pate & toast, or cheese, bread & grapes or fish such as smoked mackerel or tuna with salad. A favourite just now is Salade Niçoise.

LizzieSiddal · 03/09/2019 21:35

I tend to have a bit of a “picky” lunch -

Fish pate/cheese/Hummus with oat biscuits or toast
Plus an apple/dates/olives

pigeononthegate · 03/09/2019 21:39

My go-to lunches:

soup
wholegrain crackers with cottage cheese and salad
houmous and salad wrap
tuna salad with pumpkin/sunflower seeds
bean chilli in a toasted wrap
big plate of crudites with houmous to dip
leftovers from previous night's dinner

Baked potato with protein and a salad. Soup, bean stew or salads. I always include a small amount of protein and some carb eg a slice of bread.

user1493494961 · 03/09/2019 21:48

If I had eggs for breakfast I wouldn't want lunch.

GrannySquares · 03/09/2019 22:01

I would usually have a salad with griddled chicken (seasoned).

DisgraceToTheYChromosome · 03/09/2019 22:15

Staggs vegetarian chili is good, or the reduced fat meaty one. Eaten with extra chipotles and half a small tub of Greek fat free yogurt.

UrsulaPandress · 03/09/2019 22:18

Breakfast eggs at 11 then no lunch.

Elieza · 03/09/2019 22:28

Baked potato and tuna or beans.

Dowser · 03/09/2019 22:29

3 Belgian chocolate covered rice cakes with mashed banana on
Daily treat
Gf and dairy free

Benjispruce · 03/09/2019 22:33

Salad with tuna or avocado, sushi. I make a lot of salads sometimes with rice or cous cous or just lots of veg , some feta and seeds. I don’t really let breakfast change what I eat for lunch. I tend to have either egg or porridge.

YesQueen · 03/09/2019 22:34

I'm low carb so eggs for breakfast minus the toast Grin
For lunch I usually have either
Tuna pate and cucumber sticks
Salad - feta or chicken Caesar
Ham rolled up with Philadelphia and cucumber

Samosaurus · 03/09/2019 22:48

Why not have the eggs for brunch then skip straight to dinner?

acabria · 04/09/2019 06:42

Sandwich

BarbaraofSeville · 04/09/2019 07:51

Samo But that requires you to be able to cook eggs mid morning, which many people aren't able to.

In theory I could do scrambled egg on toast during our mid morning break at work but I'd make myself very unpopular with everyone else trying to use the tearoom/kitchenette at the same time.

abitoflight · 04/09/2019 08:13

Tuna, smoked mackerel,
Leftovers from night before

BaronessBomburst · 04/09/2019 08:17

If I have eggs for breakfast (minus the toast) I'll have salad for lunch.
I usually have Greek yoghurt with fresh fruit and nuts. And still eat salad for lunch. Grin
