If you eat eggs and toast for breakfast, what do you have for lunch?

Since I've cut out a lot of sugar, I've gone off a lot of my previous breakfasts and am wanting a lot of egg and toast. Great, except I'm now stuck for ideas for lunch (we eat a lot of potatoes and pasta for our evening meal).

I don't like eating a lot of meat for lunch so would prefer vegetarian-based meals.

If you have egg on toast for breakfast, what do you typically have for lunch?

Leftovers from dinner.
Lentil Dahl (a lot).
Soup.
Baked tofu with some sort of bean.
Cous cous/tabbouleh type salads.

I'd try to move towards a veg omelette, or scrambled combination and cut the bread.

Processed and white carbs are a big cause of insulin resistance.

While we should cut out refined sugar, we should also be aware of carbs.

My go to would be a chunky soup, if i buy a tinned variety, i sometimes add a tin of mixed veg, or carrots and peas.

Start to fill up on vegetables.

I use 'No carb', pasta/rice/noodles to make veg curries/dishes.

samosaurus I'm currently up half the night with my daughter (hello, sleep regression!) So by 7.30-8am, I'm ravenous and need breakfast.

ponoka Hmm there's always one. We have a bread maker, so usually have fresh brown bread to hand which we know exactly what's gone into it. Ever heard of 'everything in moderation' ? I actually have quite a healthy diet with lots of vegetables, salad and fruit but I also love potatoes, pasta and some bread. Thanks for the insightful input though.

Some great ideas here. Recently had a new kitchen so can use it as excuse to get back to cooking properly and forgot about soup.i absolutely love this time of year just for the soup. Going to crack the soup maker out tomorrow!

@BarbaraofSeville haha yes that’s a good point! I wouldn’t be popular if I cooked eggs at work either :)

@nuttyaboutnutella Hope the sleep settles down soon! I am lucky to have a work canteen with a great salad bar, but if I’m at home for lunch, I’ll often have something like cheese and oatcakes, or tuna mayo or avocado on rye bread.
