An adjusted joe wicks recipe. Lovely with crusty bread and only takes 10 minutes so no standing in a hot kitchen. We’ve had salads all week and I was craving a proper meal.

Baked sweet potato, (done in the slow cooker), with lots of butter and blue cheese, served with salad containing lettuce, baby plum tomatoes, olives, caperberries, cucumber, spring onions, beetroot and anchovies.

We are having a bbq. Marinated soy, ginger and garlic steak, piri piri marinated corn on the cons and a Greek salad.

Pasta with cherry tomatoes, olives, capers and mozzarella. I rinsed the pasta under cold water before adding the other ingredients so it was more like a pasta salad.

Just me and DD home so she’s had frozen mac/cheese (her choice) and ive had the best part of a jalapeño and cheese loaf with a chicken drumstick and cheese.

I managed to have the hob on for 10 minutes to hard boil some eggs.

So we had prawns, eggs, prosciutto, salami, leftover cold new potatoes, chopped salad and brown bread and butter.

Trying my first full on healthy vegan cuisine Grin
Courgetti with tomato sauce, steamed greens with homemade pesto, whole grain buckwheat. Basically copying a dish we had at a cafe a while ago. Ice lollies I made from tropical fruit juice, which I haven't done since I was a child.

I can see us topping up with popcorn in front of a film later.

Lamb chops, baby potatoes with lashings of butter, mixed salad with a yogurt dressing.
