What's your go to 'easy to make but bloody delicious' pudding or cake type thing?

I feel this is something I'm missing from my repertoire. Shop bought desserts can be disappointing yet I often don't want the faff of making something that takes more than 15 mins to prepare.

I feel this is probably where Nigella's books excel.

Any suggestions will be gladly tested! Smile

No-bake Toblerone cheesecake; super easy and everyone I've made it for loves it.

Crush chocolate Digestives, mix with melted butter and press into the bottom of a springform cake tin. Put in fridge. Melt Toblerone over boiling water or in microwave. Whisk full-fat Philadelphia with caster sugar in one bowl and whip double cream to soft peaks in another. Fold melted chocolate into double cream then mix in the Philadelphia. Top biscuit base with mix and put back in fridge for a few hours. Top with grated Toblerone and/or chunks of Toblerone to serve.

Can also substitute Chocolate Orange for the Toblerone!

@SDTGisAnEvilWolefGenius ooh marmalade sounds perfect, I reckon lime curd would work too. Anything that's not too sweet would be fine

Dead easy if you have an espresso machine. Buy some fab vanilla ice cream and you're done.

Passion fruit and ginger trifle.
Buy a plain madeira cake and cut into slices. Put in a bowl. Pour on ginger wine until it soaks in. Cover with whipped/squirty cream, then scoop out three passion fruit and put over the top.

I made this on a whim last night, crushed digestive biscuits mixed with olive oil (I'd run out of butter) and brown sugar. Press in a cake tin and chill. Mix a tub of marscapone and a couple of tablespoon of lemon curd. Add to biscuit base. Top with frozen berries and chill overnight. Delicious!
