What's your go to 'easy to make but bloody delicious' pudding or cake type thing?

I feel this is something I'm missing from my repertoire. Shop bought desserts can be disappointing yet I often don't want the faff of making something that takes more than 15 mins to prepare.

I feel this is probably where Nigella's books excel.

Any suggestions will be gladly tested! Smile

Frozen berries chucked in an oven of roof dish, topped with sugar and crumble mixture blitzed in the magimix. 10 minutes absolute tops to prepare and a real stoecupboard standby.

For a pudding that’s quick to cook as well as prepare, we often bung fruit or jam or golden syrup in a basin, then a very quick all in one sponge mixture on top and a couple of minutes in the microwave. Tastes like an old fashioned steamed sponge pudding.

Crunchy pudding - egg white whisked until it’s stiff, equal volume of whipped cream, crushed Crunchie bars. Add the shards of Crunchie to the cream. Fold the egg and cream together. The honey comb dissolves to give a butterscotch flavour to the moussy egg and cream mix and the chocolate adds flavour and crunch. Its lovely, but don’t make it too far in advance - no more than about 4/5 hours before serving.

I keep meaning to try it with Daim bars , maybe that’s a job for this weekend!

Mary Berry's lemon cheesecake - couple of tubs of mascarpone, half a jar of lemon curd and a squirt of lemon juice whizzed together till smooth. Ginger biscuit or Hobnob crust. Set it in the fridge for a few hours. Bloody lovely.

One that seems celebratory and everyone is amazed at but is so easy

Baked Alaska. Plain sponge or shop bought sponge flan Jam or tinned fruit (without juice or whizzed into a puree) bought ice cream (make sure it's not soft scoop ask me how I know
All covered with meringue which takes a few minutes but is dead easy.

Sponge, fruit and ice cream (can chill at this stage if wanted but not essential) cover it all with meringue and bang it in a hot oven for 7 minutes. Meringue should be browned and a bit crispy on the outside with the rest being soft and the ice cream just starting to melt.

Real WOW and so easy

Lemon curdy pud/surprise - both Delia's cookery course and one of Jamie's early books have it. 1 lemon needed and store cupboard. Gorgeous!

Also Mary Berry's lemon drizzle traybake for cake - makes loads, lovely and fluffy but tasty.

Nigella''s chocolate mousse - the one with marshmallows. You can also use the mousse as a chocolate tarte or cheesecake.

Also passion pudding www.tasteofhome.com/recipes/berries-in-yogurt-cream/ Fruit, equal amounts of cream and yoghurt whipped together, brown sugar on top - leave until the sugar melts but the fruit doesn't go dribbly at the bottom. Equally good in a massive trifle bowl or in individual wine glasses.

It's a favourite amongst my family and friends but we have had to put a ban on it as it started to become a weekly thing and that is sooooo not good for the diet Grin

Wine jelly with strawberries or grapes. I sometimes make it with sparkling wine so it has a bit of fizz in it. Serve with little biscuits for something extra.

Lemon Surprise pudding is quick and easy, a self saucing pudding.

Fruit fool with raspberries, or cooked rhubarb or gooseberries, light and summery and easy.

Pear crumble, make tons of crumble and put it in a huge tub in the freezer, tinned pears, vanilla ice cream....once bought lasts forever and you are never more than 25mins from heavenGrin

Jamaican Cream is super easy, layers yoghurt or yoghurt and cream mixed, with a sprinkled layer of muscovado sugar between each yoghurt layer.
You can adapt it to whatever is available, crumbled ginger nuts or rum soaked raisins at the bottom of each glass, a little ground ginger stirred into the yoghurt.
Make it well ahead of time to allow the fudgey deliciousness to develop.
