What's your go to 'easy to make but bloody delicious' pudding or cake type thing?

I feel this is something I'm missing from my repertoire. Shop bought desserts can be disappointing yet I often don't want the faff of making something that takes more than 15 mins to prepare.

I feel this is probably where Nigella's books excel.

Any suggestions will be gladly tested! Smile

Nigella's nutella cheesecake recipe says it needs 4 hours to chill, not 15 mins Hmm

Oreo, caramel and chocolate tarte

Oreo and butter base, refrigerate
Make/heat up caramel, pour over base, refrigerate
Make chocolate ganache - heat cream, stir in dark chocolate chips/chunks until smooth

Pour over the caramel, refrigerate until needed.

Can make it look fancy by topping with a couple of raspberries/strawberries and icing sugar, or sprinkle sea salt onto chocolate before refrigeration.

Really easy and always delicious! Very rich, so polite slices only, and maybe serve with cream.

Can give you a proper recipe for it if you want :)

I also used to do a baked stoned fruit thing that was simple. Lots of ripe stoned fruit like peaches, plums etc cut up and destoned and put in an oven fruit dish and any other soft fruits sprinkled on top, eg raspberries, passion fruit, lychees. Cover with full fat greek yogurt, layer lots of brown sugar on the top and whack under a grill until the sugar caramelises (or use one of those wanky blow torches if availble). MUst try this again, it's been ages.

Summer pudding and vanilla pannacotta ( BBC food ) and of course Eton mess varying the fruit using kiwi and passion fruit from time to time

Dorset apple cake. You melt the butter so there's no creaming butter and sugar together. A nice way to use up apples that have been in the fruit bowl a day or two too long - you can use eating apples for this one, rather than having to buy special cooking ones.

For my daughter's birthday I made a Lotus Biscoff cheesecake, I remember that being very quick and easy too.

This is so easy - everyone loves it! Very rich though. Been making it for years, often gets requested. You can do a similar version with dark chocolate and marmalade.

I used up half a packet of puff pastry last night - rolled it out, sliced three apples very finely, arranged on the pastry, sprinkled with sugar/cinnamon, baked for 20 mins at 200 degrees. Was gone before I could say, Maybe we could eat leftovers for breakfast?

I make a lemon cheesecake-y thing that isn’t a cheesecake because it has no cheese in.

Blitz biscuits into crumbs - I use ginger biscuits, and add melted butter. Press into flan tin and chill.

Mix one big tin of condensed milk and the same amount of double cream, and add lime or lemon juice (the juice of about 3 lemons, or 4-5 limes) and their zest, and whisk until the citrus juice thickens the cream and condensed milk. Pour onto the biscuit base and chill - it will thicken and set so you can slice it.

Or raspberries and white chocolate ganache - chop up white chocolate into fairly small bits. Heat the same amount of double cream (ie. 200g of chocolate = 200ml of double cream), to almost boiling point. Take the cream off the heat and pour it over the chopped chocolate in a heat proof bowl, and stir until the hot cream has melted the chocolate. Allow to cool a little, and pour over raspberries in a bowl, or individual bowls, and allow to cool, chill and serve.

Tinned pears in bottom of tin, make up a ginger cake mix, put on top, bung in oven. Can serve hot or cold, it's really easy to put in microwave for a couple of mins. Love it with ice cream.

Ice cream - one of the many no churn recipes out there that basically requires you to mix double cream, sugar and the relevant flavours, then whisk to soft peaks (use an electric mixer...) and freeze.

I've got some lovely but rather boozy espresso martini ice cream in the freezer...

I'm surprised no-one has mentioned chocolate mousse. So easy and quick to make (although does need time to set) and just delicious.

Same for Tiramisu.

Raspberry meringue roulade. Or it can be lemon curd, passion fruit, etc. Basically a meringue (4 egg whites, 8oz sugar) cooked for 20 minutes in an oven (8 mins at 200°, 12 mins at 160°) tray, left to cool, spread with ingredients and rolled up. Can be done in well less than an hour. Doesn’t matter if it looks rustic :)

If you’re feeling poncy, the surplus egg yolks can be made into a custard which can go with a crumble, thus making a choice of desserts.
