What makes a really good BBQ?

Holding a BBQ for around 40 friends in July. Any ideas about how to make it special and fun for our guests?

Have burgers and sausages for the traditionalists who will go NC and slag your BBq off forever more as The One With No Burgers, and some fancy stuff for the more refined people Grin

We did a bbq for 86 guests once. Cooked a whole lamb on a spit, it was delicious. We did also do the burgers, sausages. We have a friendly butcher, who made them, he also made kebabs etc. for us. I just hand the numbers to him and he works his magic with the meat.

The baked bananas as well as the chocolate we slosh cointreau on them before cooking, food of the gods.

Lots of lovely salads, rice, pasta, tomatoes with basil leaves, green leaf, fried onions, a selection of breads. It is great fun. We did put up gazebos borrowed just in case. Xmas lights in the trees made it pretty in the dark.

We had our first bbq of the year tonight. Burgers, sausages from the butchers, chicken kebabs, and a huge chopped salad, simple but delicious, can't beat it!

A friend does ribs. dry rub cooked the day before in the oven for hours. Then on the day the mopping sauce and finishes on the bbq. So good...

Something like this is only fifty quid, it can be reused, and is easy to put up, but as it has sides can protect from the rain. It's also big at 9 foot by 18 foot. You can then put all your drinks on tables in there, and also your speaker, ice etc, things you wish to protect from the elements. Plus then serve the food in there buffet style,and if the worst happens and the heaves open, your guests can shelter in there.
