What makes a really good BBQ?

Holding a BBQ for around 40 friends in July. Any ideas about how to make it special and fun for our guests?

Lots of options of food but not so much that you're throwing it away is the hardest bit to plan.
I would suggest doing burgers and sausages with a few extra bits like chicken legs (cooked in the oven first and then finished on the BBQ for the traditional taste!), kebabs, Buffalo wings, potato salads, tapas style foods like olives, stuffed peppers etc.
If I know i'm getting food for a lot of people, I tend to get the majority from Aldi and Lidl and also have a look around local butchers to see if they're offering BBQ Hampers on any offers.
If it were me, personally, as i'd be providing the food, I would suggest to my guests that I'll provide soft drinks for the non drinkers and the children and ask adults to 'BYOB (bring your own beer)' as this really does add to the cost! If you wanted to be sure to provide something a little alcoholic, perhaps you could do a nice fruit punch (adult only!) and/or some sangria as these aren't too expensive and can go a long way.
If you have any B&M stores or anything near by and someone with good art skills, you could do some face painting with the children or get some cheap and cheerful Boules, Sticky Balls or something for them to do to keep them occupied for a few hours....maybe a cheap swimming pool depending on the size of your garden.
I've just realised that this sounds like a lot of things, but obviously you wouldn't do all of them ha. Just some cheap and cheerful options for your guests and their little ones.

Good quality burgers and sausages are fine , home made chicken ( marinated in lime , ginger and soy ) and veggi kebabs. .
Fish in foil is a good idea as it cooked quickly and can be served while you are waiting for the bigger pieces of meat to cook.
Make sure you cater for any specific diets ( veggies , wheat intolerance etc )
Keep half of all of the cold stuff either the cool box or in the fridge that way you won't end up with soggy salad and warm meat and if the food gets knocked off the table or contaminated by flies or spilt drinks you will have something reserve.
With so many guests coming I would encourage them to bring either salads desserts alcohol or pop otherwise it's going to cost you a fortune and be very time consuming.
Invite neighbours round too if you know them well enough that way there's no complaints if the night goes on a bit late.
It may also be worth considering hiring a marquee just in case the weather does turn

@IncyWincyGrownUp you can definitely cook it in a frying pan. A grill pan would be best so you get the charred lines but I find them a pain to clean! The teriyaki gives the beef a charred look anyway so you don't need the flames.

Home made coleslaw, tastes soooo much better than shop brought and so easy to make

No long waits for food. If you’re doing sausages or chicken start them in the oven and finish on the BBQ.

Lots of interesting salads and veggie options.

Lots of cold booze.

Sunshine.

Places to sit so it’s easier to eat.

For me its the different salads, breads and so on that make a bbq. I'd also ask people to bring a salad if they can (if its that sort of event)

40 is quite a few people. I'd keep it simple meat wise or it could be very expensive or quite hard to keep on top of the cooking if you're offering lots and lots of options. I think burgers, sausages are a good option for large groups. I love leg of lamb but youd need quite a few of them.

Defo do disposable cutlery and plates but good quality ones. I use bamboo ones.

You need more than you think.

Makes clearing up so much easier.

Use reusable plastic glasses if possible. Ask around friends. We can usually cobble together enough for a BBQ party as lots of people have 6 or 8 camping/party glasses.

Have someone on glass duty doing regular sweeps and 30 min dishwasher loads to keep the clean glasses coming.

I'd rather have sausages, salad, and a bit of potato salad with a chilled out host than fancy food and someone you never see because they are running round trying to present a gourmet meal.
For 40, I'd pre prepare sausages (naice ones from a good butcher), chicken in teriyaki sauce or honey/mustard, baby new pots with sea salt and olive oil and leave them in disposable trays in the fridge so you can just whack them in the oven, then finish the meat off on the bbq. Maybe a pulled pork done in the slow cooker if you have one.
A pimp your burger table would be fancy without ongoing effort

I've been planning a grown ups barbecue this morning.
I like to stick to a theme, food-wise so that everything mixes and matches. This is what i've come up with.
Main bits: Lamb kofte, chicken shawarma, halloumi and fig kebabs and falafel
Salads: Panzanella, red cabbage,carrot and onion, avocado and feta
Extras: baba ganoush, tazatziki, lebanese pickles, flat breads
Dessert: Rose and raspberry eton mess
Cocktail: grown up lemonade - Limoncello, vodka, fresh limes and cloudy lemonade

Any other booze is bring your own
Also v.important is really good music

Depends on your budget, we had a BBQ for my wedding. Cost about a grand to feed 40 but it was AMAZING. Lobster tails, massive tiger prawns, scallops, salmon etc. Spatchcock chicken, steak and posh burgers and "posh dogs" which were like German bratwurst. Fried caramelised onions, corn on the cob. Honeyed pineapple if you do a gammon. The possibilities are endless and delicious!

Loads of different colourful salads, potato salad, fresh coleslaw, lovely fresh breads (crusty and soft) and all kind of relish, chutney and sauces.

And then drinks and pudding Grin

Cooking for 40 is tough if you do lots of different things - even with a massive BBQ, there will be a lot to cook & fiddle over. There will always be someone who will miss out on something - unless you do 40+ of everything.
I would do plenty, I mean PLENTY of two decent meats (slow cooked first ) then cooked off on the BBQ :
BBQ ribs
Legs of Lamb marinated with yougurt/mint/mango/whatever
Brisket Beef
Pulled pork
All of these will just need turning and slicing and can be pilled up once cooked. Get a local butcher to bone roll & prepare in advace.

Kebab stylee:
Loads of grilled veggies & hallumi
TIger prawns
CHicken satay

Really nice bread basket, proper butter & cheeses
Fresh fruit bowl/salad

Colourful salads galour!

I love a BBQ me, defo all in the prep/pre cooking & minimal effort once your guests arrive.

We went to a 50th birthday BBQ and there were enamel mugs for everyone with markers (in pretty pearly colours as I recall) so you could personalise your mug and take it home. And it wasn't just for the kids. I thought that was a clever idea and sum of them were quite funny.

We went to a big BBQ once and they had a huge old tin bath filled with ice and beers, I can't find a pic but this is similar with a wheel barrow. Sounds a bit silly I guess but it was actually really cool!

oh, and yes to posh dogs. Similar to pimping the burger.
Fun for kids and fussy eaters - fried onions, cripsy onions, sauces/mustard, pickles, crushed nachos, squirty cheese. Get 'diner style' napkins, baskets & sauce squeezers

For 40 I wouldn't do a BBQ (sorry!), instead I'd do slow cooked pulled pork with brioche buns, onions, coleslaw, apple sauce, BBQ sauce alongside potato wedges, a couple of different salads and then a selection of quiches, pork pies, cheese, biscuits and chutneys.

Main reason: I love a BBQ but for 40 people you're either going to end up with undercooked meat, cold meat or a long wait for food. How much do you buy & cook? Difficult to judge whereas with pulled pork buns, work on 2 buns per person. Also someone is tied to the BBQ all day.

We did pulled pork instead of a BBQ for 30 people last summer and friends are still talking about it now. We had a cider bar set up, wheelbarrows full of beer and wine, a pimms dispenser and a pina colada dispenser. Crisps, sausage rolls & honey glazed mini sausages were brought out when people arrived.
Puddings were key lime pie, after eight mint brownies, gin & tonic granita and lemon cupcakes.

If you're going to do a bbq though, I'd like to see:
Chipolatas
Burgers
Slices of steak served with lime juice
Veg kebabs
Corn on the cob
Baked potatoes
Greek salad

I'm really hungry now Grin

We had a big one last year which was very successful.

We put a marquee up that we bought for about ninety quid from amazon, but it's huge, you can get smaller for less money, much less money. You need something in case it rains. Simply you never know.

Lots of drinks out and ice buckets. We used decorator tables that we borrowed. Everyone who brought drinks we put them on thr tables sitting beside what we supplied and let folks help themselves.

Plastic cups for drinks and plastic cutlery and disposable bamboo plates ( they are solid and hold their shape). Then you just walk about after they eat with a bin bag and clear up so people can keep drinking.

Music, make a playlist and have a speaker outside, use an extension cable If you have to.

Beg, borrow, steal tables and chairs. People like to sit down and not on the grass ideally.

Buy some big spotlights if your garden isn't lit up, just plug into the extension with the speaker. They are dirt cheap from amazon or b&q.

Plenty of salad, rolls, coleslaw, potato salad , as well as things like mayo etc. Cook things like chicken, kebabs, sausages etc in the oven and put in those disposable trays you put turkey in to cook for Xmas. Do things like burgers on the bbq itself. If you have a big bbq also do things like mushrooms and other veg etc on there. Make sure all the food is ready at once and bring it out together.

If you think about it, and we have a big eight burner bbq, you can only cook so much on it at once. So for example, forty people, you need thirty burgers, thirty chicken breasts, thirty kebabs, thirty sausages etc min, it would take forever to cook them all on thr bbq in rotation, so some things need to be in the oven. Have everything marinaded and on trays before it all kicks off so you just need to put things in the over or take them out to thr bbq.

Don't scrimp on portions or drinks. Make sure you've a ton of mixers. Make some sangria, some Pimms in big jugs. Plenty of beer, we filled large plastic storage boxes with ice and put the beer in that. Lots of wine, red and white, some bubbles if you're feeling extravagant. And as said, a shit load of soft drinks.

Also we put loads of nibbles out. Olives, nuts etc on the tables, for people to pick at before we ate.

Did a couple of bbqs recently. Chicken breasts (quicker to cook and eat!) marinated in cajun spices, good quality burgers, halloumi kebabs, salmon fillets in foil and pork fillet in bbq sauce done in the slow cooker and pulled apart.

Salads - green salad with walnuts, giant couscous with red onion, feta and mint, Jersey Royals with butter, tomato, mozzarella and basil.

Also had jumbo prawns with a spicy dipping sauce as well as crisps and dips, various relishes/sauces.

Plenty cold drinks - I did an alcohol-free punch as an alternative to fizzy lemonade/coke.

Hope this helps. As PPs have said, make it interesting with marinades and dips, and do lots of salads. Have fun!

thread just cooked baby potatoes on skewers, brush with garlic olive oil and grill until crispy. They go with everything.....

Agree some of these suggestions are incredibly expensive for forty people. King prawns, lamb, steak, even enough baby potatoes on skewers,, champagne, it would be hugely expensive.

We have fifty people and did nothing like this, it was chicken breasts, burgers, albeit good quality quarter pounders, kebabs, baked potatoes, cap mushrooms, salad, etc and plenty of booze, and probably spent in the region of three or four hundred pounds on just that. If we had done the things suggested here we would ha e been well over a grand.

Thank SO much everyone. You are all so creative, I now have so many wonderful ideas to think about.

I don't think we will be spending £1k but are prepared to throw a few hundred at it.

We will cook a lot in the oven and finish off on the BBQ. I am super organised so will prep as much as I can beforehand.

Love the idea of artisan bread and proper butter.

We got married last year so will use the playlist from the party, it will bring back lovely memories Smile

A marquee is a good idea, we will think about that.

Friends are camping in the garden post BBQ which should be interesting...
