Recipes that don't work. So frustrating!

Does this happen to other people? I've followed two recipes recently which have both been disappointing. One was Paul Hollywood's carrot and almond cheesecake (not keen on the texture and fairly bland) and Delia Smith's chocolate mascarpone cheesecake (not as bad as the first one but the description promised a lot. Needed more sugar imo).

So, tell me this happens to you and I'm not just a rubbish cook!

The crucial thing with duck breasts is to score it into strips right through the skin so that the fat can get out.
Then fry superhot skin side down, then cook in the oven skin side up.

I never have much of a problem with recipes other than them being completely bland. I bought a beautiful Persian recipe book, tried a lentil dish and there was just not enough spice in it. It would have been perfectly nice with twice the amount.

I am probably misremembering though because although I have loads of recipe books I tend to read and adapt to ingredients I have and like. And I’ve never catered a dinner party!
