Inspire me please - what’s for dinner tonight?

We’re going to the dentist straight after school so later home than normal and can’t decidw what to cook for dinner
Please inspire me with quick and easy ideas for me and 4 year old DD who’ll eat almost anything

I've stuffed (well, put on top) two big mushrooms with cheese and chorizo. Topped with panko breadcrumbs. Bit of garlic butter too.
Ready to bake later this evening.
Salad leaves and balsamic dressing to serve with.
Couldn't be easier.

Kids are having sweet and sour chicken with rice.

Chicken, peppers and onions in wraps with dips. On the table within 15 mins of starting to chop.

I think I’d do a quick stir fry type meal.

Chicken
Onion
Peppers
Sweet corn
Small tin of red kidney beans
Fajita seasoning (or whatever spices I have to hand)

Fry on a good heat for 20 minutes until the chicken is cooked through.

Tortilla wraps or gem lettuce to wrap it all up in. Maybe some guacamole.

If you wanted to do something even easier/quicker I’d do a quick chicken Caesar salad

Pre cooked chicken breast
Caesar salad kit
Crusty bread on the side if you want to pad it out a little

Chicken pesto pasta

Ingredients
Chicken
Bacon
Red onion
Pesto
Bit of water to loosen up
Half fat creme fraiche
Pasta

Fry off onions, chicken and bacon.
Throw in pesto. Water to loosen sauce. Couple of tablespoons of creme fraiche.
Mix with pasta. Job done.

Yummy and works with any pesto of choice.

Joe wicks Chicken and cauliflower cheese

Put cauliflower on to boil/steam

Cut chicken into strips
Fry off with a little oil and dried sage
Add onions to pan

In a bowl add creme fraiche, one egg yolk, parmesan and a good lot of grated cheese and mix

Transfer cauliflower to a oven proof dish, spoon over the mixture and put under frill for 10 minutes..

It's so tasty !

Quick sweet and sour chicken. Can be done in microwave in under 10 mins but would recommend using a wok or frying pan.
‘‘Tis on bbc good food. We have it with rice and veg on side

We're having Shepherd's Pie but as DH has been faffing about since about 7am preparing this, I don't think it comes under quick and easy!

Jollof rice (made it earlier), roast peppers, tomatoes, courgette, mushrooms, red onion and garlic (already prepped it so will be quick to cook), and slices of grilled halloumi.

Roasted tomato, red pepper and carrot soup with a few lentils as well and some crispy bacon on top. 1h to roast slowly with some red onion and garlic but quick enough to simmer with lentils and blend up afterwards.

I'm making pasta with prawns, sugar snap peas and prawns mixed with garlic & herb cream cheese. Served with garlic bread.

Home made sticky bbq chicken wings here. All marinading in the fridge so il just throw em in the oven with some chips. Nice and quick

Think I’m going to try that quick and easy sweet & sour sauce. I know I’ve got everything I need to make it at home and I’ll do a sort of chicken stir fry and noodles with it
Keep the ideas coming though everyone and then I might make it through the Easter holidays in one piece Grin

Think I’ll make mushroom risotto but that’s not that quick.

Eggs always make a quick tea. Egg, beans and chips? Or an omelette?
