Inspire me please - what’s for dinner tonight?

We’re going to the dentist straight after school so later home than normal and can’t decidw what to cook for dinner
Please inspire me with quick and easy ideas for me and 4 year old DD who’ll eat almost anything

_Tonight's Dinner: _ Chicken Chow Mein --well my take on it!

Ingredients (serves about 3 people)
^3 garlic cloves
Chunk of ginger
1 red chilli
2tbsp dark soy
2tbsp tomato purée
2/3 chicken fillets
Noodles (straight to wok are easiest)
1/2 carrots
Handful mangetout
Few mushrooms
1tbsp veg oil
Couple handfuls beansprouts
3 spring onions
1tbsp oyster sauce
^
Chop chilli, grate ginger, crush garlic. Put in bowl with purée and soy sauce. Chop chicken. Throw in. Coat. Leave to sit while you chop other stuff.
Cut carrots into sticks. Halve shrooms. Cut sprungions diagonal like a chinese takeaway does!!
Boil some water. Cook carrot and mangetout for 4 mins.
Heat oil. Cool chicken and marinade 5 min.
Add in veg and noodles. Cook couple mins.
Mix oyster sauce with couple tbsp water. Throw over dish. Serve.

It's delicious. You can chop and change the veg to suit people's tastes.

I didn’t post my actual dinner I’m making today, so here it is...

Chicken with Spring Vegetables:

Chicken thighs, baby potatoes, carrots and onions, fried and then simmered in chicken stock, with asparagus and sugar snap peas added at the last minute. Sauce will have tarragon, bay leaves, lemon and creme fraiche added as well.

I’ve not made it before, although I do something similar with chicken, gem lettuce and petit pois which is very tasty. I’m really looking forward to it!

I've chicken thighs in my freezer so might try it next week.

Tonight we’re having a half crispy duck and pancakes, spring onions and cucumber, with prawn toast on the side. And a bottle of wine. Or maybe Prosecco!

Need to knock the wine on the head for a bit. But that can wait til another day. Grin

Fry some onions and fennel seeds. Add chopped tomatoes and black pepper, and simmer gently for 5 mins uncovered.
Cook some rice
Lay white fish fillets on the tomato sauce for one minute. Drain the rice. Turn the fish over so the other side cooks. Serve the rice, lay the fish fillet on top and cover with the sauce. Add Tabasco for a bit of heat.
I serve with French beans

Tonight is cooked breakfast - sausages, bacon, eggs, beans, hash browns, tomatoes (and mushrooms for me as I'm the only one who likes them)

Also making spaghetti Bolognese ready for tomorrow night.

Veg sausages, mash potato with some garlic & herb philadelphia mixed through, broccoli, baby corn, green beans and carrots, and a dollop of onion chutney on the side.
