Lemon Curd

Looking for lemon curd recommendations.

Not eaten it for years & not even sure if I still like it but inspired by another thread I'm fancying some on a hot cross bun.

Any you would recommend/avoid?

black current is my favourite curd, but the only places I see it is from the national trust.

I've only ever heard of lemon curd. Didn't know you van get other flavours.

If I toast my hot cross buns & put lemon curd on would you butter them aswel?

Oh my god, I love lemon curd. I can't believe I have never thought to slather it spread it on a hot cross bun.
I always make it using a microwave recipe, I'll see if I can find mine.

It takes about 30 minutes to make and once you’ve tasted homemade you will never go back to the stuff in jars!!

Here's the one I use, it's from a pampered chef bread and butter pudding recipe made with croissants, white chocolate and lemon curd.

2 lemons
2 eggs
1 egg yolk
70 g (2 1/2 oz) caster sugar
25 g (1 oz) chilled butter, cut into pieces

For lemon curd, finely zest and juice the lemons. Whisk eggs, yolk, sugar, butter, lemon juice and zest in microwaveable bowl.
Microwave on HIGH for 1 minute; whisk. Microwave on HIGH an additional 2-3 minutes; whisking after every 30-second interval or until thickened. Store in fridge until ready to use.

Make your own as a pp said. Very therapeutic stirring it until it thickens. The only pita is grating and squeezing the lemons.

Was going through some books recently and came across a scrap of paper wiy’Dad’s lemon curd’ recipe on it. I had to make it in his memory and it was truly delicious. We ate it on biscotti.
A lovely way to remember my lovely Dad

The Tiptree one is amazing.

I have it on toast with small chunks of dark chocolate. I let them sit on the hot toast for a minute to soften before spreading the curd across... it's SO good Blush

Don't buy the Co-Op own brand version - it was all they had when I wanted some for a cake filling and it's not great, it was ok in the cake but wouldn't be very nice on toast etc.
