Savoury pancakes - what are you putting on yours?

Thinking of making buckwheat pancakes for main course and some traditional lemon & sugar ones for pudding.

Any good recipes you'd care to share?

Really should go and make the batter. Anyone got an easy recipe? I make drop scones every week but not done proper pancakes in yonks.

I'd go traditional and do ham & cheese.I'm gonna use this recipe from google:
250 g de buckwheat flour
salt
2 eggs
50 cl cold water
40 g melted butter
It says the batter needs to wait two hours after being mixed. I don't think i can wait that long.

In a break with tradition, (and a sure way of causing my DM a cats bum face) I'm having a go at making a version of these sweetcorn and feta pancakes, with salad and sweet chili sauce.

I've two ways to make batter @AnneLovesGilbert

321, 123....

321:
100g flour
2 eggs
300 mls milk

123:
100g flour in bowl
2 eggs
300mls milk in slowly while whisking

Or measure eggs in a see through cup/jug
make a mental note of where the eggs come to
pour eggs into another container.

Measure flour into cup/jug up to same level
Put in a bowl
Pour eggs into flour.
Measure milk into cup/jug up to same level
Pour milk slowly into flour/eggs whilst whisking.

I'm not bothering today, because DDs have already had pancakes for tea at nursery and after-school club and DH has turned vegan so doesn't eat pancakes, but we sometimes do pancakes for tea on other days and put mushrooms, spinach and cheese in. That's nice. I really wish I was having ladybranstonpickle 's version though.

Steak, mushroom, kale, gruyere and creme fraiche sort of concoction, and then some leek and goats cheese ones.
Can’t wait, dp is currently cooking.
I have made the dc pancakes for breakfast and then for pudding - I’ve probably tossed 30 pancakes today Grin

Best savoury pancake/crepe I had was from a stall near to Gare du Nord station whilst waiting for the Eurostar home.

Ham, cheese (oh, to be able to do dairy again!) and, because I'd been there for a whole three days without speaking English once (yay, me - not bad for one term of lessons aged 13!), I asked him to add mushrooms.

It was lovely.

(For sweet pancakes, my favourite is proper, sharp lemon curd and creme fraiche).

happy a day too late now I’m sorry! But for future pancakes you just make a really simple batter of flour, baking powder, little bit of oil and plant milk (I used soy) They come out just like regular pancakes!

Im boring, I just did ham and cheese
dd tried egg mayo and claimed it a success. dh made protein pancakes with salted caramel sauce which I thought would be awful but though extremely sweet were quite nice.

I make an awesome pancake lasagne-just use the pancakes as the pasta sheets and bobs your uncle :)
