We've had a cake thread recently and very good it was too. Made me think about puddings and how much I really enjoy a decent pud, even though I don't eat them very often.

My favourites are warm Bakewell tart/pudding with custard, a proper steamed golden syrup sponge, dark gingerbread with custard, really rich chocolate mousse.

Can you tell it's cold where I am! Hot puddings all the way (although mousse is not got obviously).

Finally made a proper pud tonight for dinner - did a roast chicken so it seemed right. Tried this nigella recipe for marmalade pudding and it was really good - so moist and orangey, great with custard. I did half the quantity and I reckon you could get 4-6 portions so goodness knows how big the full sized version is! Dead easy to mix up with a hand mixer and chuck in the oven while it's still hot after cooking dinner. Will definitely make again

Strawberries, natural yoghurt and dark melted chocolate.
Crumble and custard.
Cheesecake and ice cream.
Melt in the middle chocolate pud and ice cream.
Tiramisu.
Icecream.

Have people discovered homemade microwave steamed sponge puddings? Not quite as good as the proper way, but also takes less than 10mins to make. Recipe attached. Can also sub in some cocoa for a bit of the flour, upping the milk ever so slightly as cocoa is drier.

I also love chocolate chestnut pudding - it's basically just booze, cream, chocolate and chestnut puree... Yum.

I've made the microwave sponge puds before. The trouble is if they arent all eaten at one sitting they go like housebricks!!

@RagingWhoreBag sorry I know this thread is a bit old but what do you bake the holiday hot cake in - a traditional pudding bowl or more a deep ceramic baking tray? Confused!

I used a large glass dish like the one in duggee’s photo (the one I normally make lasagne in!), but I doubled the recipe as it would have been quite a shallow sponge/more like a biscuit if not! I imagine the timings might be off if it’s too deep though - can’t remember what Nigella used.

Duggee yours looks lovely! Definitely going to try that one. Nigella knows what she’s doing when it comes to easy and delicious puds.
