What potatoes would you serve with rack of lamb?

I'm not great with chef'y things but ordered a rack of organic Lamb as it was in the Ocado flash sale. It's arriving in a couple of hours and I've just realised I have no idea what to serve it with? Rice seems a bit bland, chips seem a bit cheap, the only idea I had was maybe dauphinnoise potatoes? Be grateful for any ideas!

Also, courgettes - I have about 6 courgettes left from a recipe I ended up not making so how to use those? Cut them into chunks and roast (& if so then how please? Freeze and lob in with a chilli when next doing? Mortified at how rubbish I am in the kitchen [embarrassed]

I would do proper roast potatoes or possibly sweet potato mash. Or sweet potato fries if youve got some.

I would do roasties, but dauphinnoise sound nice :)

Courgettes you could roast or deep fry (if you have a fryer), or I've had them in chocolate cake too which is very nice :)

To roast them, literally just chop into quarters, drizzle with oil and season, then bung in the oven for 30 mins ish at 180C :)

Roast the courgettes with olive oil and garlic. Serve the lamb pink, with gravy and mash for the potato option.

Roast potatoes with rosemary and garlic or dauphinois. Mashed potato would work too.

Courgettes are nice when sliced quite thin and pan fried with some garlic, lemon and herbs

For simplicity, roast potatoes and roast courgettes - add some onions and whatever you have in the bottom of the fridge to the courgettes. Dauphinoise potatoes are fantastic but in my experience take ages to cook.

Oh don't overcook the rack of lamb! Definitely wants to be on the pink side and won't take long to cook

Oh my god I love you lot!! Friend has been on at me for ages to join mumsnet and I was a bit 'meh' but this is literally only my second post and you're all being great!

Dauphinois would be good or I do farmhouse style potatoes: cut into cubes and roast with red onion and pancetta. You need a little oil in the tray to get it started. Serve with tender stem broccoli and peas.

I find courgettes don't roast that well after freezing. I would grate a couple of them and make veggie fritters. You can add any other veg you have lying around. You can freeze the fritters once cooked and reheat in microwave for lunch or snack. With the rest I'd probably make a soup. Cook the courgette in veg stock with leeks, peas or anything else that takes your fancy. Once cooked, blend and add some black pepper and a squeeze of lemon for zestiness.

I should add that when I say dauphinoise, I do mean the bought one from M&S or Extra Special from ASDA (cue more Blush !!)

I love the idea of cubing and roasting the courgette though. I have such low confidence in the kitchen (years of my mother telling me how shit I was at everything has really stuck) that its great to think I could try new things out. Thank you all, feel like I've stumbled across new friends at a great drinks party or something!

This just made me laugh out loud! Ocado flash sales are sooooo good, it's a 29.99 rack of lamb but only cost me 14.99 (still a lot for a weekday dinner in my house but when I saw it I just had to have it so I feel your arm-knawing pain!)

AND I have Aunt Bessies roasts in freezer so think will do those and try be creative (for me!) with roasting off the courgettes! Thanks for your help all, what a lovely bunch you are (about to try a smile, if it doesn't work please know thats what I was aiming for!) Smile

Dauphinois is my go to with lamb. Served with a sautéed mixture of fine green beans, tenderstem, a few slices mixed peppers, red onion rings and then a peeled, a couple of seeded chopped tomatoes stirred through.

Dauphinoise would be lovely, or this Jamie Oliver recipe is v easy and the potatoes collect all the juices in delicious fashion (you could then just grill or pan fry the courgettes). Recipe link.

I'd do Greek style cubed roast potatoes with the lamb, with some rosemary if you have it, as they cook quite quickly, as does the lamb.

With the courgettes I'd make courgette and pasta soup as you have a good supply of courgettes.

A quick easy way to cook courgette is to grate on the large side, heat up a frying pan with a little oil or butter, finely chop or crush some garlic. Add grated courgette and garlic to hot pan, toss & stir well, serve as soon as the courgette takes on a brighter colour, this will only take a few seconds to cook. It's especially good with fish or simple chicken dishes.
