What potatoes would you serve with rack of lamb?

I'm not great with chef'y things but ordered a rack of organic Lamb as it was in the Ocado flash sale. It's arriving in a couple of hours and I've just realised I have no idea what to serve it with? Rice seems a bit bland, chips seem a bit cheap, the only idea I had was maybe dauphinnoise potatoes? Be grateful for any ideas!

Also, courgettes - I have about 6 courgettes left from a recipe I ended up not making so how to use those? Cut them into chunks and roast (& if so then how please? Freeze and lob in with a chilli when next doing? Mortified at how rubbish I am in the kitchen [embarrassed]

Do a mix of roasted veg.

Courgette, peppers, squash, onions, cherry tomatoes and finally some baby potatoes all cooked in olive oil and herbs 😋

Just ate your dinner on Sat!

Did a crispy coating for the lamb rack- grated the end of a loaf of bread, added finely chopped rosemary, garlic, whole grain mustard and some olive oil- mixed up and pressed around lamb rack before cooking.

Potato dauphinois

Courgettes were sliced lengthways in half and then quarters, and put in a freezer bag with olive oil, garlic and some grated Parmesan. Mixed together in the bag and then tipped into baking tray and roasted.

Bloody lovely.

@LaDameAuxLicornes I just LOVE the look for that recipe but what is 375 degrees in numbers a cooking simpleton like me would understand??! And if it's 20-30 min, could I do the courgettes at same temperature for same time? (cubed and drizzled etc?)

If you've got left-over lamb, try mashing potatoes with a bit of mint sauce.

375F converts to 190C.

From experience I would say that 30 minutes will still give you quite pink lamb, so unless you like it rare I would calculate on more like 30-40 minutes and put your courgettes in maybe for the last 15 minutes or so? Just keep an eye on everything in there, and if you think either the lamb or the courgette is going to be done more quickly than you thought then lift it out and keep it warm in a heated dish with foil over it (you can heat dishes in the microwave or at the bottom of the oven).

SneakyGremlins if you shop with Ocado online then the last page as you check out offers you "flash sale items" at 50% off. They can be absolutely amazing or total crap depending on the week - you can get a raft of incredible bargains on expensive meat and fish one week, and then about 3 random items of no possible interest the following week! I stock up on the good stuff when it appears and fill the freezer.

Dauphinois is perfect with lamb.

Creamy cauliflower purée is even better though!

Dauphinoise with lamb is my absolute favourite...and a side of parsnips and shallots roasted and caramelized with butter, sugar and smoked bacon lardons.

Have not read the thread, but rack of lamb needs potato dauphinoise. Its the law.
