Agree with cherry tomatoes but roast them in the oven first with olive oil and garlic, then stir them into the dish before you put into the oven.

How about the sun-dried tomatoes in oil you can get from Lidl or similar? If you slice them in strips they are rather good in bakes.

Sliced cherry tomatoes mixed through. Mustard in the sauce, cheese and onion crisps broken up and sprinkled on the top with some more cheese.
