Mozzarella is quite bland. Not sure it would add anything to the overall flavour imo.

Sainsbury's sell a macaroni cheese with pulled jackfruit. Couldn't make my mind up so didn't buy it.

You could try the recipe out first and let me know how it went...?

I wouldn't top with mozzarella, the subtle flavour will be lost. You'd be better with a more flavoursome cheese.

Onion powder, mustard powder, Parmesan. It's about getting intense yummy flavours in that compliment the cheese.

Use strong cheddar and a bit of Red Leicester. I put breadcrumbs, salt and Parmesan topping on mine.
It's sooo yummy

I also serve smoked crispy bacon pieces, cooked until the fat separates . But serve this as an optional topping for the meat eaters.

Roast cauliflower in franks buffalo hot sauce then add to the Mac and cheese.

Or any of the options above. I’m feeling quite hungry now
