what's your favourite mid-week meal that happens to be meat free?

Just being nosey really.

I love a baked potato with hot red onions in a little balsamic (like a fresh chutney) and goats cheese.
Or poached eggs on toast
or a cheese and mushroom omelette
or huevos rancheros

Camembert with crusty bread. Though I don't think Camembert is vegetarian, is it?
Otherwise mushrooms and tomatoes on toast with lots of pepper.

At the moment it's spaghetti, or any pasta, with at least three types of green vegetables(today it was roasted Brussel sprouts, peas and spring onions) with feta, garlic, chili and a little lemon juice.

We love a veggie quiche in this house, or veggie pizza
I do potato and spinach curry more regularly than meat, and any kind of veggie soup always go down well
I’ve just discovered the best veggie burgers too (we’re actually having them tonight) they’re quinoa and spinach but are much nicer than they sound, having them on a brioche bun with some coleslaw and sweet potato fries

Animal rennet.

I love curried bubble and squeak too. Potatoes, I like baby potatoes but any work fried with onions, cabbage or Brussels sprouts, garlic, cumin and curry powder or paste and lots of black pepper. Boil an egg or two, chop and mix through.

We had veggie pie tonight, veg (carrots, peas, broccoli, cauliflower, baby corn), in cheese sauce with a puff pastry lid.

We like falafel wraps, aubergine parmigiana, minestrone with garlic bread.

That's just off the top of my head.

Quesadillas. This is my very lazy dinner or when I'm very hungry and can't wait to eat.

Open a tin of Refried beans and spread over a tortilla. Add some salsa if you wish, and chili flakes. Diced or sliced red onion and grate some cheese over it. Top with another tortilla. Dry fry in a pan for two minutes or so each side until it's browned. Slice and eat.

Chickpea, green bean and cauliflower curry - I use a curry paste and the sauce is half veg stock and half coconut milk.

Sweet potato and chick pea curry (there is a theme here!), curry paste and tomato based sauce.

DH doesn't like curry and not keen on veggie stuff either so I make a batch when I have time and freeze for something quick for me... all for me!

Jacket potato with beans and cheese

Stir fry - sometimes with egg, other times vegan with peanut butter in it, amazing how 'meaty' it makes it taste.

Mushrooms on toast, ideally with blue cheese

Lentil or other soup with toast / toasted cheese / sometimes non veggie as a sausage or two alongside it

Dahl

Aubergine and tomato and parmesan Italian thing

Spicy aubergine Chinese recipe from the guardian, forgotten details, something szechuan in it

Leftover rice reheated with peas then grated cheese stirred in, or similar with leftover mash

All the above with extra salad / veg depending on what is in the fridge

Vegetable hash is nice too. Fry peppers, onions and garlic. You can add other veg if you wish, I like spinach. cooked diced potatoes. Add salt and pepper then crack over an egg or two, mix it through and fry until set. Cheese is a nice addition.

Again with the fried peppers, garlic chilli. Throw in a tin of beans, cannellini or mixed work best, and chopped tomatoes. Heat for a few minutes, add a good amount of smoked paprika and have crusty bread with it. To keep it easy and add more vegetables I keep a tin of carrots in the cupboard to throw in too.

Most soups (I do use chicken stock cubes but easily swapped, red pepper, cheese and broccoli, curried whatever is about to go off and blended)

Oven roasted butternut squash, sweet potato and red onion- whizzed in blender with stock to make a lovely velvety smooth soup, served with crusty bread rolls. Or a cheese topped pasta bake with a tomato and red pepper sauce.
