what's your favourite mid-week meal that happens to be meat free?

Just being nosey really.

I love a baked potato with hot red onions in a little balsamic (like a fresh chutney) and goats cheese.
Or poached eggs on toast
or a cheese and mushroom omelette
or huevos rancheros

We love halloumi, salad and tzatziki wraps with sweet potato lattices. Having them on Friday, can’t wait!

Soft tacos with veg and smokey fajita sauce, rice and bit of salad too.

Probably mushroom or four cheeses tortellini, with tomato pasta sauce and a pile of veg. Though often I'd put a bit of ham or salami in it too.

Macaroni cheese - although that's a treat to scoff alone.

I LOVE a tomato soup with crusty bread, I'll happily have a roast dinner with loads of veggies, yorkshire pud, cauli cheese or leeks in cheese sauce instead of meat.

Although I was vegetarian for 15 years - started aged 13 so 30 years ago Shock Quorn wasn't invented then, so everything was vegetable or soy based. Soy burgers, just mix the powder with water... Hmmm ... Linda McCartney lasagne - lush!

Tonight I have made a chow mein - onions, peppers, mushroom, garlic, chillies and bean sprouts. Fry it all up whilst the noodles are soaking, add soy sauce to taste - whack in the noodles, stir and serve. Lovely.

We eat loads of vegetarian meals, despite being meat-eaters. Veggie meals are more likely to be quick 'n' easy.

Jacket potatoes, of course, with butter/cheese/beans/coleslaw/hummus/Sacla sauces.
Pasta instead of potatoes.
Eggs any way - scrambled being the fave.
Savoury eggy bread.
Quesadillas.
Quiche.
Pizza.
Falafel.
Everything Salad. That's salad chopped small, with everything in it: veg, fruit, seeds, nuts, herbs...
Leek and potato soup with lentils.

(I'm not keen on chilli so I use freshly ground black pepper instead, and often add other veg, too, so it has a hint of ratatouille about it.)

My home alone guilty secret is beans on toast.
For the family it was macaroni cheese, homemade pizza, pasta bake,
Carrot curry soup, fajitas, cauliflower cheese with crusty bread.

Veg lasagne (spinach and ricotta, then at least one other veg layer: sliced mushrooms, aubergines or courgettes).

Jamie's spinach, feta and pine nut filo pie. It's so delicious, but there's no way my kids would let a mouthful pass their lips, so I never make it.

Frittata

Risotto - mushroom and something else, maybe asparagus if it was season.

Stir fries with tofu and tonnes of veg (would probs skip the tofu as I don't keep it in)

Smashed avo on toast with grated and melted cheese then 2 poached eggs on top (more a lunchtime thing)

Basically all the food my kids would reject.

Veggie curry (of almost any description) and mini garlic naan breads here, sometimes with a bit of mint yoghurt dip on the side

We had mushroom risotto tonight with crispy kale. Dhal is a huge favourite, I love lentils in anything. Mexican, either a beany chilli or refried bean and sweet corn quesadillas or something along those lines.
I'm not veggie but DH is and I eat meat-free meals probably 4 out of 7 evenings.

Just about anything spicy. I love a chickpea based curry. The best chilli variation I did was with butternut squash and black beans and a ton of lime. I had it with a ton of cheese, at the time but it doesn't agree with me any more so I can't repeat the combination, these days.
