Cook a bolognaise sauce on Friday morning eat it Sunday evening.

We're away this weekend, pick DC up from school and off we go, should be home about 4pm on Sunday.
I'm thinking cook a bolognaise Friday morning and eat it on Sunday, DC usually have dinner around 5. DP and I will probably finish it off around 8. Does that sound okay, I won't give us all food poisoning?

Where will you store it? I'd probably freeze it to be honest. If you freeze it, it won't take a moment to defrost in the microwave.

Yes it will be fine in the fridge, make sure it's completely cold before putting it in the fridge though.

I was thinking keep it in fridge but like you say defrosting enough.

It will be fine. I often cook Bolognese mid week and double up to do lasagne at the weekend.

Absolutely fine, cool the mince quickly though and put your fridge to a really cold setting. I would happily do this.

Having worked in a chain pub kitchen before, a ready cooked meal would be defrosted and kept in the fridge for 3 days before being thrown away. They're reheated for customers. Don't see how this is any different.

I regularly cook myself big meals and eat them across a few nights.

Of course it will be absolutely fine in the fridge for two days. Probably more risk of food poisoning by freezing it and then not defrosting/reheating it properly!

Two days is fine! I'd say 3 days for anything with chicken in it, and up to 5 days for mince! I don't think it's even real meat. Wink

Perfectly OK if it is well refrigerated. Something like that is fine up to three days, yummy actually. Just don't reheat more than once but I expect you know that.

I had heated up sausage pasta bake earlier (only cooked last night then remains put in fridge) and it was lovely.

It will be fine in the fridge, it's only a couple of days. If it was going to be any longer I'd freeze but not for a mince based meal that's been made on Friday and eaten on Sunday.

I'd do it and I'm relatively neurotic about reheating food Smile

If anything, flavour should be better and more developed after it's sat for 2 days.

In the fridge is fine. In fact a decent rage is best cooked and left to mature prior to reheating.

Everyone saying it tastes better after a couple of day you've reminded me I made a lasagne a few months ago, didn't eat it so put it in freezer, had it a couple of weeks later, it was gorgeous!! May make my bolognaises on advance all the time now.
