What interesting toppings with jacket potatoes?

Good thread - was just thinking of starting one myself (after having cheese/beans on jackets this evening)

I make a topping that is tomatoes (fresh best but tinned will do) blended up with a spoonful of tahini, plenty of chilli to give it bite (fresh or jarred), garlic, salt & some olive oil/vinegar.

Bacon mushrooms and onion. Chop them up and stick in microwave for couple of minutes. Top with grated cheese.

My top ten in no particular order;

Beetroot, chives and sour cream

Bacon, cranberry and Brie

Curried beans

Smoked salmon, cream cheese, and chive

Egg mayo and cress

Fresh coleslaw (particularly a red cabbage based one)

Tomato mozzarella and basil (caprese in a potato)

Chilli and guacamole

Mushrooms with thyme, garlic and either sherry or cream

Cauliflower cheese works brilliantly too

I like egg mayo with a sprinkle of paprika, Chilli or mashed avocado with a poached egg & black pepper.

I once had stir fry veg (the only vegi option!) which was nicer than I expected but haven't had it since.

My dc like soft cheese on theirs. Or cheese & beans.

Anything flavoursome and preferably spicy. The very worst topping, imo, is plain cottage cheese.
