Having an earlyish dinner of homemade nachos. Have the tortillas cooking in the oven and going to put chicken chunks on top of the salsa for some extra oomph

What about spicy chicken pasta for you OP? Or stuff the chicken with cream cheese and wrap in bacon?

Veggie burgers here, although it was a toss up between that, fajitas, pasta bake and sausage and mash!

i am making a kind of quick chickeny cacciatore type thing.
Frying proscuitto off, then frying off an onion and garlic in the fat from the ham (and some mushrooms) emptying pan, sticking the chicken in the same pan. frying that for a few minutes, taking the chicken out, adding some wine cooking it down for a bit, adding tomatoes/tom puree and then cooking it for about an hour in the oven. Serving with bread and veg and roasties.
I have no idea how it will taste. I suspect my kids will eat just the veg and maybe a bit of scraped off meat :D

we are having spicy chicken wraps but i think i will have mine as a quesdilla sp? but DH will need to go get cheese we crunch nachos to go inside our wraps....delish!

The kids have got pizza and sweetcorn for their tea. I'll have a tuna mayo sarnie. My husband is having the joy of moviprep ready for tomorrow's shenanigans at the drs.

We’ve just put lamb shanks in the oven to slow cook with chickpeas & tomatoes. Chicken based though for you OP we are using some later in the week for an oven baked chicken & bacon risotto

Frying pan lasagne here.

Make a basic ragu. While that is bubbling break up some lasagne sheets and boil. Fry some corgette. Then put the cooked lasagne and ragu in the frying pan. Stir a bit. Top with mozzarella and cheese put under the grill.

PinkHeart I suspect I would be the only one to eat it if I did spicy chicken! My youngest is not the most adventurous.
