Can I ask you our opinion on cupcake flavours?

I’m doing a big food festival at the weekend. Obviously I know cupcakes are not for everyone but they still have their place so I’m trying to make my stall interesting and to stand out.

I have

Strawberry and prosecco
Gin and tonic
Strawberry milkshake
Salted caramel
Chocolate
Vanilla
Lemmon
Cookies and cream
Cherry bakewell
Carrot

Also have gluten free chocolate and lemon.

Having large cakes of
Red velvet (this is a vegan recipe but you wouldn’t know)
Victoria sponge
Chocolate orange
Tropical

I’m having brownies too and cookies. Have I missed anything?

How about sticky toffee? I would find that interesting in a cupcake as abit sick of all the salted caramel out there .

More ideas: pina colada (pineapple cupcakes with coconut frosting or other way around)
Strawberry shortcake cupcakes
Chocolate orange
Rocky road mountain cupcakes (the toppings for these could be quite impressive and I’d prob fill or decorate them with marshmallow cream)

prettygreywalls · 22/08/2018 17:55

Are the big cakes sold whole or by the slice ?
I personally would buy a slice of cake rather than a cup cake

PasstheStarmix · 22/08/2018 17:55

Sorry you said chocolate orange

PasstheStarmix · 22/08/2018 17:58

I would do strawberry shortcake instead of milkshake as reckon that’ll appeal more

LaGattaNera · 22/08/2018 18:00

James just a home baker, we have a cake club at work, take in turns to bake for the office, and each time I do two different flavour cupcakes. So over a few years, I've tried multiple flavours and taken requests!

DropZoneOne · 22/08/2018 20:25

Wow, that is some list of cake! How long will it take to bake and decorate that lot?!

JamesDelayneysTattoos · 22/08/2018 21:09

dropzoneone All of this week. All the brownies, decorated cookies and cookies are done and in the freezer.

I’m baking my lemons, carrots and anything else sticky tomorrow. Victoria sponges tomorrow night (around midnight, early hours)

All cupcakes will be done Friday as they don’t really keep.

All the buttercream are made and in my extra 2 fridges in my garage.

I have lots of lists. I’m dyslexic and find it hard to organise myself so I have to write every step down, then my lists have lists.

Do you think it’s too much ?

DextroDependant · 22/08/2018 21:25

My only problem would be choosing which to have.

JamesDelayneysTattoos · 22/08/2018 21:28

dextroDependent I’ll see how I get on, might leave the cookies for the following days.

They sound amazing!!

MeyMary · 23/08/2018 11:58

I agree, they sound amazing. Also, brownies!! 😍 I personally am usually more of a pie person but some of your stuff sounds great :)

Idk if that's a helpful input but here goes:

I had some of the most delicious amaretti recently. And they're - like amaretti in generalI- gluten-free :) (celiacs - at least in my limited experienced based on a good friend - tend to appreciate being given slightly unusual choices. "Unusal" obviously really depends on where someone is from...)

Anyhow, good luck :)!! I hope it's successful.

GirlfriendInAKorma · 23/08/2018 12:36

Flavours sound amazing and now I really want some cake!

puzzledlady · 23/08/2018 12:44

i would make a swiss meringue buttercream and then add your flavours to that maybe? Its such a lighter alternative t those who find the traditional buttercream taste too much - what are you using - the english buttercream or the french buttercream propotions? What about adding a lemon curd in your lemon cupcakes? With strawberry cupcakes, to enhance flavour (because its so hit and miss with fresh strawberries) add freeze-dried strawberries to the topping.

JamesDelayneysTattoos · 23/08/2018 23:58

Thank you meymary I think I’m will do different flavours each day.

puzzledlady I love Swiss meringue buttercream. I use 500g butter to 1kg icing sugar, is that French or English? I have lemon curd in the cake batter for lemon. I did look in Sainsbury’s for freeze dried strawberries but they didn’t have any so I got raspberries instead for the white chocolate cakes.

I made the strawberry and prosecco to test today, oh my, so yummy. They actually do aste of prosecco.

Coffee with vanilla and a walnut!

Im GF too and am bored with chocolate brownies. I've had apple cakes, strawberry cream sponge and orange polenta cake before - all scrummy and different.

MrsMotherHen · 24/08/2018 07:15

someone further up said scones! definitely do fresh cream and strawberry scones just plain ones they will go down well with any of the older generation who might be overwhelmed with flavours which sound fricking amazing by the way!

SomeonesRealName · 24/08/2018 08:06

A mistake we made when we had a cake stall was not having any bags or boxes for people to buy multiple cakes and take them away with them. We could have sold a lot more than we did.

OlennasWimple · 24/08/2018 12:09

I'd disagree with the scones and cream suggestion. It's a cupcake stall, not a scone stall - if I were looking for scones, I wouldn't even think of going to that stall. Plus they need to be made up fresh right there with jam and cream, because they dont' keep well ready prepared (never mind the question of which goes on first...). This is time consuming and not necessarily feasible with a busy stand - the joy of cupcakes is that they are ready to go

JamesDelayneysTattoos · 24/08/2018 14:26

I can’t do fresh cream as it’s a high risk food and I don’t have age refrigeration on my stall, same with cream cheese.

There’s a really lovely scone person that comes every year that ive bought from in the past, she does cream teas in boxes, a fab idea, not for my stall though.

We’ve added cake pops to use up cut offs, so have got chocolate and vanilla.

Orange polenta cake, great idea, I’ll add that. I love that.

I have loads of boxes, 4’s and 6’s. Also a large B&M nearby if I run out. Got some singles too but not so many. GOT paper bags for cookies too.

Thank you so much for all of your suggest, take good to hear what would encourage people to come over.
