Can I ask you our opinion on cupcake flavours?

I’m doing a big food festival at the weekend. Obviously I know cupcakes are not for everyone but they still have their place so I’m trying to make my stall interesting and to stand out.

I have

Strawberry and prosecco
Gin and tonic
Strawberry milkshake
Salted caramel
Chocolate
Vanilla
Lemmon
Cookies and cream
Cherry bakewell
Carrot

Also have gluten free chocolate and lemon.

Having large cakes of
Red velvet (this is a vegan recipe but you wouldn’t know)
Victoria sponge
Chocolate orange
Tropical

I’m having brownies too and cookies. Have I missed anything?

fumingmoomin funnily enough our mint chocolate used to be a best seller but I didn’t really think about it. I’ll add it on.

moomicorn good point about flavour choices. I’ll drop chocolate gf and go Banana based. Good call thank you, i think you’re right.

I’m doing a large rainbow sponge too and unicorn cookies (swirls of colour the covered in sprinkles and white choc drops).

I think the salted caramel is supposed to be like the bacon I.e. salty-sweet

fuminmoomin another good call about loaf style. Make the stall look good too. All vegan cakes are dairy free so red velvet is. I can do the banana one too as df.

Could you do some plain ones with no flavouring? I find most flavoured cakes too sickly. I would generally only buy plain, chocolate or lemon drizzle flavours. Not keen on vanilla either.

Good that you are doing labels, the amount of times one of my DCs has picked a delicious looking cake and found it has an unexpected flavour (they share my plain tastes).

With regards to your gluten free offerings, please please make sure you have them separate and clear that they cannot be cross contaminated from the other cupcakes. Very few coeliacs will buy a gluten free cake if there is any chance it's been crumbed by a non gluten free cake as even the smallest of crumbs can make them very very ill.

When out with DH he will only buy gluten free cakes kept totally separate/under domes with separate tongs etc because a crumb of gluten means he's bathroom bound for at least 24 hours.

Make some dairy free options that aren't gluten free for those who have CMPA. We never had cake in coffee shops when DS was small because it was so hard to find dairy free cake.

Flavour wise what about gingerbread? Or rhubarb and ginger?

Other flavour suggestions (obviously just based on personal preference):
Cherry, Amaretti cupcakes, orange blossom, tiramisu.
Or maybe a savoury cupcake?

I dont know if it helps, but at our wedding recently we had Victoria sponge x2, chocolate x2, lemon x2, banana, coffee, traditional wedding fruit cake and chocolate brownies. The Victoria sponge was by far the most popular, with everything else also ending up getting eaten except for banana cake and one lemon cake. People like plain!

Absolutely. But I'd advise you to check whether you're allowed to sell superhero ones where you live. (I'm talking about cupcakes with copyrighted characters, trademark protections etc...)

I do keep my allergy ingredients in a separate cupboard and I clean the oven before batch baking. Boxed separately and fresh gloves used. My Dd has done her allergy training too so we’re clear. I would hate for anyone to become ill.

I have everything covered too, there’ll be a lot of people around, I o only get out what I can cover and refresh from closed containers regularly. In the early days I didn’t do this but soon learnt.

Maybe I could do dinosaurs to avoid copyright. I’ve just bought some new mermaid tail cutters, i might have a play.

Where I used to work, cupcakes simply didn’t sell. The rare occasion one was bought was when a kid wanted it and they’d eat some of the buttercream and decorations, and chuck the rest on the floor. Scones were hugely popular, traybakes and lemon drizzle, Victoria sponge. Most other cakes were usually binned.
