Best fish pie recipe

Attempting to cook fish pie from scratch tonight and would love a yummy recipe to follow! TIA

Poach fish skin side up in milk, handful of peppercorns, 2 bay leaves and an onion chopped huge.
After 25mins remove fish. It will flake. Place in oven proof dish.
Drain milk. Use this to make cheese sauce.
Add sauce to fish.
Bake with either cheesy mash, or grated cheese, tbspn of parsley and breadcrumb topping.

Um, Yorksha, you see to have left out the prawns and smoked fish of choice (or salmon!) and it's white sauce, not cheese! And ordinary mash on the top!

Lots of the recipes I've found day to put hard boiled eggs in... Had no idea it was a thing!

Slice them up, layer them over the fish and sauce and then put the mash on top.

Eggs and prawns, definitely! No fish pie is complete without them.
We quite like a cauliflower mash topping, too - the 6yo seems not to have spotted the difference...

Yoksha’s here: fish should be a mix of salmon, smoked haddock and a white fish, pref with prawns too.

Cheese sauce and cheesy mash make it extra tasty.

Be careful not to overcook the fish.

We prefer a puff or filo pastry pie. Definitely a white sauce with NO CHEESE, I usually add lemongrass, coriander and sow fresh green chillis to give a Thai flavour. Fish - I use cod, salmon, smoked haddock, prawns and for a special occasion
some scallops.

My one Grin yum.

Melt 25g butter in pan. Add 25g flour mix in. Whisk in 200-300 ml milk to make a roux. Season with plenty of salt and pepper. Add bay leaf. Bring to boil. Simmer.

Poach mixed fish/salmon/ in milk. Add prawns later as they cook fast. Don't overlook fish as it will cook later.

Make mash potato. Arrange milk/fish mixture in a pie dish, add sliced cherry tomatoes, pile mash on top and spread.

Put a handful of cheese on, cook in oven for 15 mins.

Keep some of the delicious sauce for on top! Serve with carrots and broccoli.

DELICIOUS!

HarryDresden... You have time to come on and critique a basic regional fish pie recipe. Isn't it all about preference and what's available?

I wouldn't have the audacity to add a post like yours to any offer of a quick fish pie recipe.

We do it with lightly sautéed leeks in and a puff pastry top. I poach the fish in milk and use the milk to make the white sauce (or sometimes cheesy sauce)

Ooh puff pastry topping. Never tried that. That's tea sorted for tomorrow! Bloody hell Yoksha bit harsh! I read Harrys reply in the spirit in which I assume it was intended, just the dreaded word lighthearted some suggestions for a fish pie.

Thanks for this thread. Think I'll make one for DP tonight, but with the breadcrumb topping. Will be easier to prep than making mash.

I nearly always put eggs in, but I think the last one I made I threw in spinach and tomatoes instead (after asking on here for a variant). No idea whatsoever how any of them taste, mind, as I can't stand fish, but DP never seems to complain!
