Best fish pie recipe

Yes, spinach mixed in with the white sauce. However much fish you think you need, double it. Nothing worse than a stingy fish pie.

Don't suppose anyone has this recipe for fish pie (or could work it out for me)? It was on a cookery programme (I think on C4, it wasn't one I'd ever watched before or since) about 10 years ago.

It was along the lines of:
Line tin with puff pastry
Line the pastry with a couple of ready-made pancakes
Layer of smoked salmon
Layer of salmon mousse
Smoked salmon
Pancakes
Pastry

I think there was some spinach somewhere in there as well.

It's the mousse layer I'm really not sure about. I think it included cream/creme fraiche/similar, and dill. But I'm not sure what sort of salmon it contained.

Any ideas?

The white/smoked fish needs to be haddock - cod is flavourless.

Finely chop leeks and carrots. Sweat in melted butter with some white wine until tender. Frozen peas can be added now, or some spinach, until cooked. Add double cream, handful of cheddar, lemon juice, seasoning. Resulting mixture needs to be reasonably thick.
Chop fish, put in base of dish (raw). Pour over sauce. Spread cooked mash on top with more cheese on top -unless you're on the waiting list for gallbladder removal- . Cook at 190 fan for about half an hour. Fish will be cooked, top will be bubbling.

I have a recipe from the 1960's called.'Rosy Fish Pie'. It might sound a little weird but trust me, it's delicious.

A bag of basa fillets (or other fish but I love the texture of these. I hate smoked fish so don't use it)
A few rashers of bacon
1 onion
Potatoes for mashing
Flour
Can of tinned tomatoes
Salt/Pepper to taste.

Chop the onion, bacon and fish.
Fry the onions and bacon, then add the fish. Fry till fish looks cooked (white) on the outside
Add salt, pepper and 1 tbsp plain flour. Mix.
Stir in a can of tinned tomatoes.
Transfer to a casserole dish.
Meanwhile, boil and mash potatoes with butter and milk or cream and then put this on top of the fish mix.
Cook in oven on 180 for about 35-40 mins until bubbling and starting to brown on the surface.

I made it and it was yummy! Have lots left so want to reheat it today. How long would you reheat for and on what temp??

I use a mixture of white fish, smoked fish, salmon and prawns. I never pre-cook the fish. I make a light parsley sauce, and cover with mash topped with cheddar cheese. For me this is the perfect fish pie.

I really don't fancy hard boiled eggs in my pie, or all that smoked fish Delia uses.

Which recipe did you do? Mash topping or pastry? Boiled eggs? Cheese or white sauce?

I picked out the bits I like so I made a cheese sauce with spring onions then stirred in mustard. Boiled eggs then buttery mash!

oh i love fish pie but costs a fortune to make I think we use
cod
smoked haddock
salmon
king prawns
boiled eggs
spring onions or onions or chives
all in cheese sauce topped with mash yummmmmm

Sounds delicious! I would say a good half hour. But I am pretty lackadaisical so I just keep it in the oven until it is too hot for me to stick my finger in the middle Blush

I used to have a recipe (if you could call it that...) which involved fish, layers of sliced tomatoes and a plain yoghurt sauce. Cannot remember what the topping was called.

It was something I used to cook occasionally as a student... many years ago!

Does anyone have any ideas...?

My mum used to make the best fish pie & I still make it now.

White fish of your choice (prawns if you like them)
Cheese sauce (add mustard powder if you like)
Chopped boiled eggs
Breadcrumbs mixed with some cheddar to top
Serve with buttery mash

It’s hugely calorific but excellent comfort food!

I never use smoked fish or prawns as none of us like them.

I need to make fish pie soon though as I’m hungry now!

I HAVE FOUND THE RECIPE!!!!

It's a Rosemary Shrager one (which makes sense, as I remembered it being a female chef, but not one I knew). The recipe is here if anyone wants it.

I'm pretty sure I used smoked salmon in it instead of slicing some normal salmon into thin pieces. Would have been happier doing that anyway, as I really don't like handling fish. Plus, I made it for DP's birthday so I'd have wanted to make it special for him.

Anyway I know have that recipe well and truly saved in many, many places. Having been looking for it for the past 10 years I'm not losing it again!
