Supposing you're going to sign with an agent but have already got a regular job which you organised and secured by yourself prior to meeting that agent, would your agent take a cut for that work?

Just asked DP who knows a bit about this type of thing, he doesn't think they would take a cut. In his experience they only charge agent fees on jobs where they have set you up with the audition and the booking.
