Just taken a leap and started up as self employed, people are not paying invoices on time, is this normal? It’s so frustrating

It's going to depend on the business and the customers.

Is it worth Putting something in the contract to begin with that the cost is £X, or reduced to £X- Y if final payment is received within 3 days {or whatever you consider reasonable}. Obviously where (£X-Y) is the actual cost you want to receive, and £X is more than that, so you aren't receiving less than you need for your product or service.

I have been a credit controller practically all of my working life and it's swings and roundabouts. Some will pay straightaway and other ttp. I'm now more of an accountant and glad I don't have to chase anymore. I think if you can get some good relationships set up and let them know that there'll be no work/goods/services if they don't pay you then this will stand you in good stead.
