Haven’t applied for a job in decades. I’m a mature candidate applying for a part-time PA role. Looks great and I have all the required skills! BUT I haven’t been a PA for 40 years, having worked my way up through management roles and then had my own sales and marketing business. I don’t want them to look at my CV and think I’m going to be “too much” for the role or some old battleaxe! I genuinely want this job - I no longer wish to employ people, I want to be part of a team etc and bring my experience to benefit my new bosses. Any tips on how to compose the letter so I sort of address this in a positive way and get an interview? Any dos and don’ts? Many thanks!

I want a job because I don’t want to starve/be homeless. Wouldn’t it be great if we could be honest rather than bullshitting I like the ethos of the company, the diverse nature of your products, the blah blah

I'd suggest looking at the Ask a Manager site. Loads of info on cover letters. It is very American, so you'll have to tone down the, uhhh, unbridled enthusiasm a bit, but it will get you started.
