3 interviews in one week how to choose...

So I've had 2 interviews and had one job offer via email from the first interview which I've not yet responded to but think I will say no, I'm still waiting for second interview to come back to me but it's only been one day though and they didn't really say when they would let me know. Also the jobs doesn't start until January. I've now got another interview on Thursday, which I think is the one I really want due to better pay conditions, immediate start but I'm worried about losing out if I don't get it. I typically applied ages ago and now they have all come at once and I'm worried about if they all offer me the job or the last one doesn't. I don't want to accept and then get made a better offer and be messing people around. I really hate the job I am in so desperate to find something else.

I would reply to the current job offer and say you are so grateful for the offer, can you take a couple of days to think it over/talk with family etc and you will get back to them. If your not too bothered about taking it then it's a good option to keep the offer there just in case. With the second interview, you could reach out to them in a few days if you've not heard anything and just ask if there has been any progress on the interview process, and ask them to confirm when you could expect the outcome. If you are offered the second job, personally if you like the sound of it I would accept if you haven't had the outcome of the third interview and go back to the first offer and reject. Then if you do get the third job, the one you preferred the most, hopefully it wouldn't be too long after you accepted the second job and you can just be honest with them and say I'm sorry but I have to pull my acceptable, I have had another job offer which I cannot turn down etc you never know they may end up counter offering 😏
