My boss recently put through an order for me and a few others for some equipment we need.

There was an email sent to confirm the order and within the email was my address and mobile number - this was also shared with the other employees (whom I don’t know). It made me feel a bit uneasy as I am the only female on that list. I’m not really sure if I should bring this up with my boss or leave it as maybe I’m being over the top?

Well, no they shouldn't have been shared. But no harm will come of it. I was wondering why you're concerned - it seems like the manager made a mistake, but I don't think it's a big issue really.

Were everyone's details on the email or just yours?
You mention "a list" and that you're the only female on it, so it sounds as if there was more than one person's details on it.

It's too late now as the email has gone out - sounds to me like your boss just didn't think about the consequences of inadvertently sharing such info.
You could mention it though, as it's obviously bothering you, and it seems a genuine breach of your personal data which could (and probably should) have been avoided

Sorry to sound unhelpful but I really don't know what to say given these circumstances as unless you want to make a complaint and go in all guns blazing, I don't know what your "lesser" alternatives are.

As well as my own, I could see others personal details on the email. It made me feel uncomfortable. I want to mention it without making a big fuss as I’m sure it was done without thought. As you say, it’s too late now as the email has been sent.
