If I don't write down my last employer on an application, could my new employer see the previous employer from my P45 or other documentation?

Whomever you pass your P45 to is going to see it though, yes. Probably you won’t hand your P45 to your new line manager, but that would depend on the type / size of organisation you are moving to.

We request that all our employees disclose previous employment. If we were to find out that a previous employer was undisclosed, it would question how trustworthy our employee is and may even lead to dismissal.

Disclose everything and explain why something did not work out.

You don’t need to submit your P45, you may get taxed more because of the emergency tax code but you then get a refund.

If your previous employment was in an earlier tax year, no need for a P45. Wait until April 6th then you are good to go.
