Healthcare assistant future career

Hi all, I am currently a healthcare assistant apprentice where I am 60% through in a specialist department when I have just been offered a band 2 healthcare assistant role which will go alongside my apprenticeship programme which would mean I would be working for more money (if all goes above board) as this would carry on when the apprenticeship finishes. I have verbally agreed to take up the position but now am wondering if by august when my apprenticeship is due to end if another opportunity arises such as ward hca or training to do my nursing apprenticeship as I am interested in it, where do I stand and would it just be simple as handing in my notice. I have taken this for now on the basis it gives ,me job security as well as loving the job but in the long run I want to challenge myself further. What are people opinions as whether I am thinking logically or not. Even through I have verbally agreed, could I still change my mind if I wanted to.
