Can I remain ‘anonymous’ if I make my CV/profile public on job sites

I am registered on various sites but mainly use Indeed, CV Library and Total Jobs. I used to get a reasonable amount of interest when I made my CV viewable/searchable on CV Library, however I hid it when I got my current job.

I am looking for a new job now, but I wouldn’t like my current employer to find out by coming across it (or finding out from someone who knows someone in a related industry for example). Is the full CV public, including personal details to anyone who is registered as a recruiter? Or do they have to do something specific to access it?

I am not entirely sure how it works from the ‘other side’.

Would it be okay to remove employers names, and just include job title and description, or would it seem off to recruiters?

I am not concerned about all previous employers details however my current one is a fairly large organisation, and my team is small, so even if personal details are omitted, I think I would be identifiable if employer details are visible.

I have been looking for a while now, and am starting to get desperate so I would like to up my chances, even if it is only a slight amount!
