When to hand in notice

I was offered a new job a few weeks ago via phone and asked to hand in my notice (two weeks) once I received my offer letter, which still hasn't arrived.
I have completed my dbs for the new role and my employer has informed me they have submitted my reference. I've contacted my new employer regarding a start date but have just been told they are waiting for HR to send out the offer letter.
My problem is I currently work a rolling rota and with christmas around the corner I was hoping to have recieved a start date and handed in my notice already, giving me a few days off over the Christmas period.
So, do I hold off and potential work over christams (again) or hand in my notice in the next few days guaranteeing time off but running the risk of there being a gap in my employment?

Hold off. It’s a terrible job market out there and companies are pulling roles all the time last minute. Much better working over Christmas than spending it looking for work. Good luck I hope it works out ok!
