Redundant but re-employed by same employer!!

Hi everyone,
This question might raise some eyebrows as were applying for a mortgage even though I am redundant, but missing out that detail when applying for a mortgage.. :-/

Basically..I’ve just come back from ML (mid Nov) and so my Nov payslip is my new working hours (now PT, was FT before ML), but employer has made me redundant at end of Nov, but reemployed me for another 3 months, they’ve done this so I could receive redundancy pay based on my old FT salary (which I thought was very nice) and they need me for another 3 months to help the new owners move over to their new finance system.

So the tricky part is, we are applying for a new mortgage with our current lenders to move to a house we have had our eye on and is now up for sale (literally our ideal house!) and we can’t not have a go at getting it.
My employers have said I’ll receive redundancy pay in Dec, with accrued hol and notice pay in lieu of notice, but I’ll still be employed on a part-time basis (i believe they will be getting me to sign a new contract for the next 3 months as other role is redundant) -
So my question is, should I receive 2 separate payslips for Dec, one with accrued hol etc for end of one contract, and another with ‘basic pay’ of new contract. And therefore I can conveniently only supplying the mortgage lender with the new payslip??
(Note We have given my new salary as basis for lender affordability assessment not old salary). And just conveniently not mentioning that technically I am redundant (although kind of not as still currently employed by same employer of 8 years).
