how many staff for cafe?

we are opening a 75 seater cafe, at the point of recruiting and finding it hard t work out how many staff we will need - for serving (counter service), cooks, kitchen staff

Any advice please? Thank you

Depends a lot on location and how busy you will be, I worked in a similar sized cafe, beautiful location right on the Thames in a very wealthy area generally we had 2 in kitchen and two front of house on weekday, on weekends this was upped to include a KP in kitchen, 3rd members front of house (1 to stay on till only) along with a young one to help waitress
