Business Start Date: Turning a Hobby into Business

I am currently trying to turn my hobby into a small business alongside my day job.

Is anyone able to help advise when my start date should be? I already have all of the equipment and some stock so already have some potential business assets which is making things complicated for me.

Any other tips/things to consider?

Whenever you started selling or purchased items to sell (whichever came first). You say you have stock, therefore your business has already begun and is no longer a hobby.
