and do i need to get a police check (she is spanish, how would this work?)

Never thought about a police check (we employed an Italian nanny in UK for a while). Ask what she would do in an emergency - eg if your child fell over and hurt himself badly and if she has any first aid training. Have your children with you and see how she is with them (and how they react to her). I think this is the most important thing. We have lovely new nanny now, whom the children adore, and they are so different with her than they were with previous nanny.
