Nursing auxiliary - hospice/ palliative care

I am currently a student nurse and I am wishing to apply for a part time/bank job in a hospice in my university area.
I have a few, possibly silly, questions.

  1. what do I put in the covering letter? 2)what can I put in the supporting statement expressing my interest in palliative care without sounding insensitive? Also, does anyone have any experience of this type of job and any tips/advice. Aside from being a student nurse, my two previous jobs were in a café and bar work, which involved v short applications, which is why I'm a bit stuck. Many thanks :)
