Recruitment questions

Got a couple of questions about recruitment as I'll potentially be looking at changing jobs in the future.

  1. Why do companies ask for your current salary? Why is it any of their business? Surely they have a budget for a salary they think is worthy of a role and previous salaries are irrelevant.
  1. When negotiating a salary should it be done by email so there is a written record or in person? I expect negotiations done in person are more successful but how can you ensure they stick with the agreed salary?
  1. If job searching whilst on maternity leave would you tell the company that you are on maternity leave and when you intend to return to work or just go with a standard my notice period is x amount of time?
