Should the holiday I have accrued whilst on maternity leave be paid at my previous full time hours?

My leave started April 5 (i know return if full 52 weeks would be April 4) but hopefully my return date will be February (when I want to start using my accrued 31 days holiday April to April).

I know that as you go through the year you accrue holiday but what I want to know is up until my return date (and new hours/ contact starts) ) should any holiday I have accrued up to that point should this be paid on my full time salary?

Yes I think so. I accrued loads of holiday whilst on mat leave, and should have gone back in August but got paid till 2nd week of October. I went back on reduced hours and then new holiday entitlement started.

To be paid at your old rate ie. not at your new part-time rate, you would need to take you holiday in one chunk and be returned to payroll but not physically go into work at all.

If you decided to go back to work for 1 day at your new part-time rate and take the other 4 days as holiday then those 4 days would be paid at your part-time rate.
