What business would you put here???

I have a shop unit free in a small seaside, touristy town. Currently the house rental trade is booming in the area so I was thinking of opening a ready-food shop (like lasagne portions, salads, pies, desserts, etc - all to go) there is nothing like this in the area. It is a small town though with 3 supermarkets, 4 coffee shops, 1 book shop, lots of pubs and restaurants and a few clothes and gift shops. My head is spinning from trying to think of the right thing to put in the unit. So, what would you put in it???

One opened in Heswall last year (my Mum lives there), lasted 8 months, very busy little town but too much competition from M&S & Tesco up the road, also my Mum tried a few and said they were not that nice. I think if you do the offer and branding have to be stand out fabulous.
