Cover letter for a copy writing/marketing job - snappy or formal?

So, the job is for a tourism board and they want someone who can write; social media, letters, marketing campaigns, news releases etc
Do I write in a way that suits their product and audience?
Or do I stick to more corporate formal language?

I haven't worked in marketing before - I used to be a journo - so I want to prove straight off that I can do it, though I am wary of appearing too casual.
