Try to find out what she’s into? Many girls these days With the pandemic and all really want things like cash for online games or shopping. Or arts and crafts are also huge (a hot glue gun Plus stuff To go with it if she doesn’t have one, maybe)?

Depends also, of course, on how much you want to spend and what the child already has.

Good t-shirt - my DD had an evolution of windsurfing sweatshirt from Cafe Press - they're quite good for finding Ts, sweatshirts, mugs or whatever with just about any design you can think of on them.

Yes we have already got her microscope, telescope, glove, scooter, science kit, a million scary American girl dolls... a magazine sub might be good too.

It’s tricky when it’s someone else’s children isn’t it? The parents always say ‘oh don’t bother, she has everything...’ (so I threaten to send a drum kit or a puppy - only joking!)

Obviously pannier bag requires they have a pannier rack already. They can be tricky to get on smaller bikes, or to fit on women's bikes with the saddle set low. So that's probably not something to get on spec.
