DSM5 and gender - explains some things?

I've just come across this intro page in the DSM-5. I've always wondered why the psychological field has gone so off on this, why practitioners who should know better are going along with all the nonsense, such as "assigned at birth".

I know the DSM has many, many issues and I can easily speculate as to why it's tied into something that would end up with prescriptions being written (again). However, I'm still shocked that the doctors (psychiatrists go through medical training) can actually print shit like this. It recognises that sex exists, but removes its relevance at birth. Surely at least some of the psychiatrists did a rotation in obstetrics?!
