Anyhoo... after umpteen false starts, is it accurate to say that amendments to the GRA would, in effect, mean that we would be enshrining an ideology (ie TWAW/TMAM) in UK law?

Yes.

The GRA was intended to make life easier for a small number of people who had a recognised medical condition - gender dysphoria - and found 'living as' their birth sex too distressing. This was considered the kind thing to do because GD as a medical condition objectively exists. We can see that are actually people who are dysphoric.

Now, Theresa May says being trans is not an illness and shouldn't be treated as such, and the suggestion is to therefore move to a system of self-identification of gender.

There is no evidence for the existence of 'gender identity', aside from the insistence from some people that they have one. In this way it's a bit like souls. Lots of people believe they have a soul. While their right to believe in souls, and to express that belief, is enshrined in law, I imagine lots of us would protest if laws were drafted to protect souls themselves. Eg. we couldn't have abortion if souls were protected. Defamation laws would extend to dead people.

Similarly with belief in god - everyone's free to believe or not in any number of gods or none, and to express that belief or non-belief. We don't want blasphemy laws though.

Honestly, the whole thing is such a nightmare, there's still times I have to almost pinch myself to believe that it's really happening.
