The cooking programme thing is interesting, especially if you contrast it with something like GBBO. I remember at some point in the last series just realising what a nice programme it is, in that it's competitive, but you see them all supporting each other, celebrating their achievements and commiserating with the lows. And lots of hugs and tears when people leave (from men and women). It's such a change from other programmes on at the moment (Masterchef, The Taste etc) and I'm sure that must play a part in its popularity.
